i think it was because Rose told her that she was interested in someone even though she really cared and appreciated her.. and also because at the end it´s a game and the couple with most hearts would win. She already knew that rose would not chose her, so yeah i probably would have done the same in her situation... they have met up after the show, but idk if in a romantic level.

My guess is that Jasmine chose Deer at the end for the sake of winning the reward money and also to avoid negative media pushback as SK isn't really accepting of the LGBT. Jasmine did enough throughout the show to convey her true feelings about White Rose. White Rose was very understanding of it and had no feelings for the Deer by the end. When White Rose gives Deer a heart, she did it to help Jasmine win. As Deer and Jasmine would exchange their final hearts it seemed clear that everyone was in agreement to win. Another reason to think this, is that WR had no reason to give her final heart to Deer. He arranged to speak with her one last time before the finale, but she felt no particular way about him having given a heart to Jasmine previously. Jasmine also stopping in front of WR before going to Deer (which seemed to really shock him) felt a little more meaningful than 'Goodbye & Thank you'. It was as if to say to everyone including WR that she's her first choice and will have her real heart. WR in the moment seemed to really appreciate it. Which reminds me of the moment WR used all her points on a date with Jasmine. At that time she told the cast something along the lines of not finding any value in the love points but the person she wants to thank the most. WR said something similar when she gave her first heart in a while to Jasmine. The two hang out after the show very closely which seems evident that they are pursuing a deeper relationship together. (Jasmine was at WR house to play with her dog, Jasmine gave presents to WR, Gave WR chocolate on V-Day and they seemed to be taking photos at the same places)
