One of my favorite memories from a trip to the Lake District was stopping by a tea house after a hike around the lake. It had been very drizzly and cold, so popping into the tea house was a treat. My mother and I sat down and were given a pot of tea and a choice of cake. They had a gingerbread cake that was served warm and in a bowl with heavy cream poured over it. Oh my goodness! It tasted like my great grandmother's gingerbread recipe. She was born in 1864 and was 99 and 10 months old when she left us. I have her cake pan (a 10 inch square pan that gets rusty!) and every time I bake that cake, it reminds me of Nana and of the Lake District! A square of gingerbread cake, served in a bowl with cream along with a pot of tea would be a fabulous addition to your cake offerings!

For us followers in the US wouldn’t a women’s retreat for 10-12 traveling together be amazing! Safety in numbers and I’ve been to the Middle East and South America like this. Finding Mapperton and the stunning grounds would be such a treat. 🌟

Queen Victoria’s wedding cake was soaked in brandy. I think that would be an amazing historical recipe to recreate. Her chef “Charles Elmé Francatelli” if you reach out to me I can e-mail you the pdf of his cookbook. I think historical recipes would be amazing for your cafe. I would be happy to share other ideas regarding historical recipes, dinner menus, digging through the archives of Mapperton and bringing the past to life for visitors, etc. Your channel is amazing. I applaud you both for keeping this majestic estate preserved, alive, and current.

The Classic Bacardi Rum cake with walnuts is to die for. It is complete heaven. A limoncello pound cake is pretty good too! French onion soup with red wine is filling, yummy and hearty.

I make chocolate truffles with Grand Marnier or with chambord as gifts. Use good European dark chocolate and roll in cocoa powder. Also chocolates with herbs and pink peppercorns and sea salt flakes if you have an herb garden. Thyme is good. You can use your own produce. Everyone likes a bit of chocolate, especially on a special outing.

I watch Kirsten and Joerg’s channel, they are a German couple living in England and they travel to national trust properties and estates with gardens and do wonderful filming. I watch a channel about a French manor house that houses fishermen to come and enjoy the lake. They have had zero visitors due to lockdown also. Most of the French chateau tourism has been at a loss.

Guisness is a nitrogen beer. The ball you hear in the can is for the nitrogen when you open it. Also the best thing to do with Guinness or any nitrogen beer is to turn the can completely over into a pint glass and let it pour out, don’t pour it like a traditional beer!

SUGGESTIONS ONLY💞Here are several ways of getting a tender, moistened, fine crumb in gluten-free cakes: * Add a little extra leavening. Gluten-free flours are heavier and grab more moisture than wheat flours. Adding a little bit more baking soda and baking powder can give the cake batter the extra lift it needs for a fine and tender crumb. *Beat well. You need to aerate these batters. And because you don’t have to worry about gluten, you can beat the batters for a fairly long period of time - usually three to five minutes. This adds air to the batter. The protein and starch in the flour and eggs will form around the air bubbles. *Use flours with a low protein content. A 50-50 split of flours and starches gives the cake enough structure but keeps the texture fine. *Substitute sparkling water or soda pop for some of the liquid. This adds more air to the batter, which helps get the lift you want in any cake. *Add some finely divided solids, such as ground chocolate or cocoa powder. That’s a food science term for ingredients that are chopped very finely. *Use brown sugar. Brown sugar has more moisture than white sugar (which is why you have to pack it into the cup to measure it), so it makes the cake crumb more tender and moist. *Use more sugar. Sugar adds tenderness to cakes, and it’s *hygroscopic*, which just means that it attracts water. I'm gluten free & you need to buy the book Make everything gluten free by Becky Excell. The recipes taste amazing. I can then like many thousands of others eat in your restaurant. Its very hard to eat out when you can't eat wheat although many restaurants are now making an effort.

Well, maybe you need to throw a “freedom“ event. I know when I got my two shots and I could finally see my family and experience some freedom and normalcy it was rather moving. I had to quarantine alone in my home so my first month of freedom was dedicated to massive hugs and kisses on my grand babies. Now, I am ready to go out among the people. So maybe a nice tea party event to celebrate families would bring people out en masse.....or a May Day garden event.
