How to Make Swiss Baskets - The Victorian Way

INGREDIENTS
200g Butter - plus extra for the moulds
200g Caster Sugar
200g Plain flour
Zest of 2 lemons
4 Eggs
2tbsp Redcurrant Jelly
115g Finely chopped pistachio nuts
115g whipping cream
Candied cherries
Candied angelica
METHOD
Preheat the oven to 180° C. Line your moulds with butter and a little flour. Cream together the butter and flour, whilst adding the lemon zest gradually. Add the eggs one at a time, then gently fold in the flour. Divide the mixture between the moulds. Cover the moulds with tin foil, then bake for 50 minutes until golden. Cool the cakes in the moulds, then turn them out. Trim the tops of the cakes so they are flat. Remove the centre of the cakes using a knife or corer. Warm the redcurrant jelly, then brush this onto the sides of the cakes. Roll these in the pistachio nuts until they are coated. Whip the cream to stiff peaks, then pipe this into each of the cakes. Decorate the cakes with cherries and angelica, then serve.

And I was so confused as to why a gatekeeper had a lot of servants, and why she had that look on her face. Added by the fact that I watched a movie yesterday where the secretary to a king had an entire village underground to keep women in for his pleasure, I was very worried 🤣

She is! At least judging interviews and such - a thoroughly delightful person. She's a 'historical interpreter', if I remember the term correctly. So, strictly speaking, not quite the same as an actress - since she doesn't play random roles in movies/tv shows or such. Her specialty is impersonating historical figures not just in front of a camera, but also on historical sites like Audley End House or on reenactment festivals and such, staying 'in character', while interacting with visitors.

I feel like this needs to be its own TV show, because it’s a little like a grown-up Mr. Rogers’ Neighborhood. Between Mrs. Crocombe, and “Your Korean Dad,” and Uncle Roger, things are good for the rest of 2020 👍

I seldom post comments but I really like the characterization of Mrs. Crocombe. Many people say she "glares" but more often I see a firm-but-mild expression in those eyes. Like a teacher or a grandmother whose attitude is, "I won't stand for any nonsense, but I'm on your side, you know."
