INGREDIENTS :
🥩~ 1.5kg Whole Lamb Leg, Rump end ( de-boned , ask your butcher… we love the friendly lads & ladies at Torre & Morcini in Carine )
🍍 Half a Pineapple
🧴 500g Greek Yoghurt
🌮 10 Corn Tortillas ( we recommend La Tortilla brand )
50g Fresh Parsley
10g Fresh Basil
200ml Extra Virgin Olive Oil
Salt
All Purpose Seasoning ( or your favourite bbq rub )
Chilli Oil ( we recommend Season & Ko brand )
METHOD:
- Season Lamb with loads of salt & APC ( or your fave bbq rub )
- Cook Lamb for approx 20-30mins or take it until 60C internal
- Rest the Lamb well…
- Skin & Segment Pineapple into thick strips, salt and Grill
- Chop Parsley and Basil fine, mix with a spoon of Chilli oil, Salt & enough EVOO to make a smooth Chimichurri
- Warm Tortillas on the bbq until easy to fold (about 10-20 seconds)
- Slice Lamb & Dice Pineapple
- Build Tacos.
