I would never do a competition like this... but why are they not wearing food safety gloves and the man with the beard should be wearing some sort of net over his beard because I have seen professional food servers with a beard net.. and the women usually wear some sort of hairnet

Because firstly, they're in Canada so the US food handling policies is not the same. Secondly, I think there's a debate about how helpful wearing food safety gloves are in a professional kitchen. Generally, most restaurants I've seen have the chefs just wash their hands regularly between different preps. The beard and hair net... i suppose it depends how loose and long the hair is. Tbh, Josh's beard isn't all that long. They're also not selling or serving this food to the general public. Only the judges and tv crew would maybe eat it. So it's not the same. Also, are you telling me you wouldn't eat at someone else's house if they didn't have a hairnet or gloves? I think as long as they cook in a clean kitchen, it's going to be fine.
