I would like to share a classic Mexican dish with you all. It is called THE EPIC FOREST ENCHILADA! I'm a big foodie, and told a good cook. I live and travel in a motorhome and have a pretty small kitchen, so people are usually a bit impressed with what I can produce in there, or on the grill. But, I absolutely bow down to you guys. I love the nature and animal scenes. I absolutely love the outdoor, primitive nature of your cooking. I discovered these videos while in the hospital while going through cancer treatment. Talk about relaxing, while also setting goals for once better. I just got back from first camping trip with a good size group and made my sour cream pancakes over a fire, and then that evening, a big dutch oven of cajun red beans with sausage, and rice and buttermilk cornbread. It was a hit, but just a nice feeling to be out in nature, enjoying life, and cooking for others.
