I just rehabbed mine. I had neglected it for over a year. It had a normal jar top on it, so very little of the tea evaporated during that time. I saved 2 cups of starter tea and brewed a new batch of tea like I used to, put the scoby and reserved tea in it and it turned out great. They are so resilient. They go into a sleeping state when the tea reaches a vinegar state.

I have one from 3 years ago! It has a regular top on it as well. I had forgotten about it. When I found it I opened it and WOW it looks perfect! Smells like vinegar though! I was surprised at how great it is! Kombucha Scobys are Very resilient obviously!

It still looks healthy! I abandond mine for 4 weeks in feb when I was sick. Was VERY vinegary lol. I made my first scoby with store bought kumbucha. I would add that vinegar bucha to your new batch too. Love this, thank you for vloging the process of "IF" this happens to you

I know crazy how healthy it still was, I was able to gift 2 away. I know they all get forgotten at some point. My vinegar was way too strong and would have thrown my balance off right away

I don't make kambucha, but I do make a lot of vinegar. That means sometimes I have scobys coming out my ears! I tried drying a couple of nice ones paper dry and ground them finely. Mixed with sea salt, it makes a delicious popcorn topping.

I've done it too. I ignored the scoby in the main vessel as well as all the scobys in the Scoby hotel for about 10 months. I actually managed to revive the scoby in the main vessel by doing two feed and flush cycles and removing the first scoby baby because it was weak and starting to grow a few tiny mold spots. The current scoby is thick and healthy and still going strong. :-)

I have done that with my SCOBY - good save! I cold brew my tea at room temperature from 12-24 hours so I don't have to cool it down.

Scoby jerky is delicious. Many recipes online. You can puree with fruit and make leathers. I like to make strips and marinate with soy sauce, hot sauce, honey. Dehydrate and then redip the strips and and redry. The strips don’t really absorb so the sauce basically dries on it. You’d be surprised how it looks like jerky and is tasty.

I would love some suggestions on how to use discarded scoby’s, if I don’t want to dehydrate & powder. Can they be cut up & put in garden? What size pieces, as they are pretty leathery! Other ideas? If I had a compost...but now city let’s us put kitchen scraps into yard waste bin, & the city makes compost.

Holy smokes! That scoby is crazy huge. We had one that was about 3 inches thick once. We got a few layers from ours also. Our first batch of kombucha was made from a store bought kombucha. Great tip on using ice to cool the tea. Was that a fried scoby wrap that Todd was making? LOL!

Hi! I was just wondering why you use filtered water? Is there a danger with tap water? I've just started making my own, I'm on maybe the third or fourth batch. You don't want chlorine in your water, that why we use filtered / pure.

I’m SO glad you posted this video, because it reminds me that I have my neglected kombucha waiting for me on top of our refrigerator! Question for kombucha experts. I have neglected mine since late December. There is still a lot of liquid in the gallon jar. Can I use the current liquid and skobies (sp?) that are in jar? Or do I discard the liquid and start all over? Thanks.

After neglecting my culture for close to a year, I successfully revived and restarted my brewing cycle! The liquid underneath the SCOBY is still viable; the bacteria and yeast are out of balance. It'll take about three brew cycles before you'll begin to see clear kombucha again, but your results may vary. You WILL get there! Rest assured, you do not have to start from scratch! The mother will be thriving before you know it :) Happy brewing!!

I would think it would be pretty vinegary by now. I would treat yours similar to the way I did and just retain your scoby and brew a new batch and use store bought plain kombucha as your starter

For quite awhile, if my scoby w 2 cups of kombucha liquid in it, if it has become vinegary, I pour off vinegary kombucha, use it for hair rinse, buy a plain GT’s 2 cup bottle of kombucha & offer it lovingly to the scoby, & then pour in prepared sweetened tea over. It has never failed, & I often take a month between batches.

As long as your tap water is drinkable and doesn't have chlorine or fluoride or anything else added it may be fine. I use our own well water. If you have city provided water though, I wouldn't use it. You could buy spring water instead.

I one gallon of tea concentrate yes, then added an additional gallon of water to cool tea down. Added all of this to my large continuous brew vessel...did you not see the whole video?

It's a fermented tea, has a bit of a vinegar kick, but when you flavor them they are really yummy. It's really one of those things that you like it or you hate it. Best way to describe it is "punchy" it punches your taste buds, your thought, your belly. If your going to try it consume in moderation until your belly adjust.

I thought the same thing as you a couple years ago. It was described as fermented sweet tea. I grew up in the south drinking sweet tea daily, so that sounded gross. But I kept hearing about it. So I tried it. Start with plain, then figure out what you like. Now I love it and no longer drink soda. The taste of homemade is soooooo much better that store bought.

Rebecca Pettifer I only tried it once, from someone who apparently had perfected the process and had very good tasting kombucha. I thought it was awful, vinegary and a touch of alcohol flavor. I don’t drink alcohol, and I’m very sensitive to strong flavors, so maybe it was just me.

No need to sterilize, kombucha thrives off any remaining living bacteria and yeast in the vessel. I washed it thoroughly that was enough.

No, you probably also eat mushrooms which are a type of fungus like mold. Not saying mushrooms are mold but they are related. You can eat some types of both, normal mushrooms and the types of mold in cheese and yogurt, or dangerous ones like fuzzy mold or some poisonous mushrooms. Fun fact: If you have a moldy bread, don't eat the "safe part". It has a very high chance of having the roots in mold, and the entire loaf may be infected likely. :-)

Yuck. There is no way that I could drink that. I have a bad gag reflex. Plus I cant drink or eat fermented foods. It makes my stomach hurt real bad. I have alot of allergies and stomach issues. I dont make stomach acid much anymore. So I have to take digestive enzyme supplements with everything I eat. Thanks to my whole life being gluten intolerant and my docs never figuring out all my digestive problems over 30 years. Instead telling me it was stress and all in my head. Then giving me instructions to use anti gas pills. Those killed off my stomach acid making abilities. Been gluten free for 7 years and dairy free for 5 years. Feel like a new person. Figured it all out myself. Thanks so much doctors. Yeah right. 🤔
