Want to enjoy ceviche but you're allergic to shellfish? Say no more! Nicole has you covered with this simple and delicious hearts of palm ceviche option.
Ingredients:
-Hearts of palm (3 sticks)
-Red onion (half)
-1 Avocado
-cilantro (one handful)
-1 Roma Tomato
-1-2 limes
-1 jalapeño pepper
-Salt
-Pepper
-Tostadas
Instructions:
1. First drain and wash your hearts of palm.
2. Dice up hearts of palm and put into your bowl you will serve your final ceviche in.
3. Next use one whole lime and squeeze all the juice out and give it a mix with the hearts of palm and let them sit together while you cut up the rest of the ingredients.
4. Cut up your cilantro however you like your cilantro chopped up and place it into your bowl with the hearts of palm and lime and mix.
5. Dice up your Roma tomato and also place in your mixture.
6. Next grab your jalapeño and cut off the top and cut down the middle and de- seed your pepper (unless you like a lot of spice) then mince the jalapeño pepper and place in your mixture.
7. Following this, cut your red onion in half and mince and place as much as you’d like in your mixture.
8. Dice up your avocado and place in the mixture.
9. Lastly, add salt and pepper to taste and give your mixture a couple light mixes so nothing get smushed.
10. You did it! Go enjoy with some chips!
