A little late, but for the future, you might leave the nut on the chain plate attach fastener to avoid dinging the threads when you’re pounding the bolt out.

Another thing, when drilling stainless steel, it is best to once you start don’t stop because it work hardens, and can be all but impossible to drill through once you stop

No way on earth Im reusing decades old chainplates. You already have them out. Reusing them is foolish.
