Rick Bayless was my first into to Mexican food. As in REAL Mexican food and culture. I’m from New England so we couldn’t be more detached from such a great food culture. Once I got older and spent a lot of time in San Diego, I got a taste of what Rick always boasted about. Then of course I had to go to Mexico! Hey, I travel for food and people lol. A lot of great history and a lot to learn from the local Mexicans. My thing was to do it all over food. And what a GREAT time it was. All because I used to watch his cooking show that I can’t even remember the name of. Thanks Rick! And even more importantly, thanks Mexicans! It’s always such a beautiful thing when people want to show off their family’s food favorites. And it’s as common in Mexico as it is with my family here in America and in Italy. As an Italian America. I was so at home when discussing food with Mexican families. A food culture I can’t wait to continue to learn more and more about.

As a young sailor, (1980’s) I had my favorite Tijuana street taco vendors, my friends thought I was nuts! Turtle and fish taco’s and the best carne asada in the world! Thanks for bringing back great memories!

Really in the 80's you found 🐢 tacos/dishes? I know that there are some places that continue to serve Turtle platillos/dishes that obtain there meat from legal Turtle farms. They are definitely far n few apart. As a child in the 60's, I do remember "Caguama", a caldo/soup platillo that oh was delish. I'm so glad I have that memory. I'm also glad that Turtles are protected & I do hope there are legal Turtle farms to provide delish platillos/dishes. Buen Provecho n peace be with us all 🙏. "Isa"

Rick, in mexico we grill the jalapeños together with the salt and eat the jalapeños WHOLE, with seeds and everything!

Tacos El Yaqui are so good, the owner told me the best satisfaction he gets is when his clients enjoy the food he makes. Also, the best birria is found in Tijuana from a street vendor along the Diaz Ordaz street and close to the Walmart. The meat is like you've never tasted before, real meat, fresh, organic, and delicious! The birria in the US is fake in comparison even in upscale restaurants the birria does not compare to the flavorful fresh meat in Tijuana.

Also in this video it wasn't until I graduated from Culinary school I started working at a hotel in midtown Manhattan and I was living in QUEENS and slowly I got acclimated to the area and I noticed a lot of MEXICAN people and restaurants in and around 74th street but if you take the 7 train to 82nd and Roosevelt Ave a lot of MEXICAN PEOPLE and slowly I started eating MEXICAN FOOD and Spanish food in general and it's good except they have all one thing in common like rice beans tostones same thing so I looked further like different tacos quesdillas burritos tamales and many of them like Chinese people and food many thing's in common and I have worked with MEXICAN PEOPLE in the kitchen as they are CHEFS now as I taught them INTERNATIONAL Cuisines not just MEXICAN food but something very different as they know MEXICAN comida interesting but true

In this video they constantly mention tacos but when I was in high school I worked at a place called ZIPPYS in HONOLULU and of course you make burgers hotdogs chili dogs chili plates with 2 scoops of short grain rice 1 scoop macaroni salad chili with or without hotdogs and 2 sausages but we also made hard tacos standard but I prefer the soft flour tortilla with guacamole Pico d gio and mayonnaise or sour cream and a little hot sauce but nowadays you can make anything tacos and I don't like the corn taco and if you go to a place and they have tacos on the menu watch out and I like Chorzio but not the MEXICAN type because once cooked it has no flavor and I stay away from the hot MEXICAN chili's to hot and I can't stand it burns my stomach but I know what I want as I don't go to restaurants anymore rather buy them on the street cheaper plus a bottle of soda worth the trip and price as I know where to go and I avoid these other food trucks as they are a pure ripoff I can make it at home for a fraction of the cost as I have everything at home besides it's to cold and a couple of days ago 9: 9:48 9:48 9:48

Nowadays, and correct me if I'm wrong, the traffic around the centro is literally stopped. It took us an hour to go a few blocks, and like 8 hours to find and cross the border. I love TJ but that's crazy.

We know how to find the border, the problem was the normal ways to get in line were changed that day and the traffic was super heavy. It's actually pretty hard to get around that section of TJ. But it's always bad the past 10 years. Our friends waited in line for 5 hours to cross on foot.@@ericktellez7632

Rick - a few years ago I became highly allergic to avocados (and other fruits & melons). Have you come across anything that I might be able to substitute for avocado? I've thought about using baked sweet potatoes to substitute in guacamole, but when it comes to salsa the starch of those wouldn't work. I've also considered cooking the avocados down so it changes their protein structure (which allows me to eat other fruits). Any tips? Thanks!

Yep, arottenbanana is right in some mexican restaurants they use salsa made with zuchini, chiles, cilantro, etc, and the flavor is similar to guacamole. I think they started using it some years ago when avocados were hard to find in Mexico because most of the production was exported. You can find the recipe on KZbin but I think it's in spanish, you can also find some blogs and use translator. The flavor is really good

In this video he talks about when he was in the NAVY and had a turtle and fish taco turtle's are protected by the FEDERAL GOVERNMENT as an endangered specie but you won't find any MEXICAN PEOPLE in HONOLULU HAWAII but it was rumored that you have MEXICAN COWBOYS on the big island and they are called PANILOLO and they live on the ranch with their families as my cousins have a ranch on the big island also known as HAWAII just look on the map and it's the largest but the youngest and it's still growing except you don't hear anything except MANANA LOA is still active
