In regards to Pizza Screens they must be oiled before they are used. Otherwise your pizza will be completely stuck to the screen after it is cooked.

What about pizza steals? I plan on buying a couple pizza pans and a docker. I will likely get both types of pans because I want to make both thick crust and deep-dish pizzas. I might also get a bigger wheel.

Some manufacturers recommend this. I typically spray non-stick on them and use them right away.
