Ethanol is more expensive than gasoline. Just remember how much you spent on alcohol the last time you visited your local bar :)

Cars will run just fine on ethanol in ambient air temperature above 45° f. They start a bit rough colder than that, whether fi or carburated, but yes, the software could be used to optimize the fuel map for efficiency or power. If the factory ecu has an extra input, you could add a fuel sensor to run flex fuel automatically.
