🖖🙂🖖 Hi Eric and sons! I always enjoy see more vending machine varieties. Tofu is very versatile, and one of my neighbors called it "Asian Cheese". That makes sense, since it was developed as a way to convert an agricultural crop, Soybeans - into a stabilized and transportable food, similar to processing Milk into Cheese. Among the multitude of Tofu products, there are some which taste like aged Cheese.

Eric, when I was in Japan, I had the most amazing tofu dinner at Kyo-Tofu Fujino in JR Kyoto Isetan. I always under the impressing that tofu was just "meh" and that you could only do so much with it, but the diversity preparations and styles of tofu absolutely blew me away.

Wow. Try it, but don't pass judgement on your first dish. Tofu is so very easy to ammend to ANYTHING. TOFU will lend itself to any interpretation

I think the thickened soy needs flavoring. At minimum, salt or sugar. I have had it with a bit of maple syrup and ginger and it is delicious. Plain is definitely not the way to go. Even steamed soy beans, most people like it with something or at least with salt.

I always start smiling when I see you and your boys. What a lovely group you guys make. I always think how amazing chef is to have such a family group. I love the different ways to eat tofu. It is an amazing food. The thickened tofu drink needs flavoring. I have seen it with sweet flavoring or salty flavoring. Either would work. The dry tofu salad looks like it would be perfect to drop on top of miso soup.
