Hi, i just made ermine Bc, i followed a recipe to a t, i live in a tropical country, and it was 34°C today. At first, it got fluffy and looked so good, when i stirred it with a spatula i noticed some liquid at the bottom, i put it on the freezer for 5min, tried mixing it and it would curdle, mixed it for about 30min and nothing changed, tried heating it and also nothing changed can you help me please?

Hi, hope this helps! The curdling usually is because either the butter or the flour mixer was too cold, and may need to be warmed a few seconds, and then re-whipped till it comes together. Which can take a while if you're whisking the frosting by hand, so preferable any electric mixer. Try doing it in small batches 1st, let me know if it improves.

Thank you...I usually make this recipe...I love it...I make the version from channel Marie's kitchen (she's also in a hot weather country)and it last me for days specially in the refrigerator..I use all shortening no butter and it still comes.out good...the first one I made I left it outside (not the refrigerator) in a cake crystal over a it lasted 3 days..nothing happened did.not melt...the others I made so far in the refrigerator....I made 2 cakes for my neighbors to take to love ones a couple of hours.from here and ohhhhhhh God they both melted I was so sad and embarrassed...That was yesterday....I'm planning to try with merengue powder and another with no color gelatin (2 cakes) and put it outside for hours to see which on last longer outside...hope it works..I'm also in the Caribbean 🏝🏝🏝🏖🏖🏖
