I’ve been eating this since I was about 8 years old. We add bell peppers and onions and fried sausage to the skillet with the potatoes and eggs and fry it up. Delicious. We never mixed eggs and set aside for 15 minutes but we just fry potatoes, onions, peppers and sausage in skillet with seasoning and then just add the eggs once we drain any grease and fry it all together. Will have to try this setting process. ❤

Spices, oil, salt, pepper, butter, and oil are all ingredients in the same way that houses are not made out of nails, but nails are an ingredient of houses. Sophie, the instructions under the video are different than what you made for us to see. I'm perplexed....shredded vs chopped potatoes, whisking the egg for the tortilla vs whole eggs dropped on top, etc. They both seem very good, though I'd lije a combination of the two do I'm not feeling like it's just an omelet with potatoes and onions, or a huge hash brown pattie with eggs cooked on top. I'm Mexican & my Mom just fried up the potatoes & added the eggs after the potatoes were good & fried. There was 8 of us kids to feed & drop off at school, so she had to be fast. She could get a meal on the table in 15 minutes, & it was always good. Plus she had to drop my dad off at work before we were even up, so just sayin' cuz she was very busy & our house was always immaculate. She had to be fast.

Tortilla Española is simply one of the best dishes. I see a lot of comments about seasoning, oil, undercooked eggs...depending on family tradition and regions some prefer juicy, I know I do. The key is fresh eggs , a waxy potato variety and to the let the egg sit with the potato (& onion if using, in our household no question 😋) think of traditional carbonara and how the egg makes more like creamy. it is a simple recipe, with fresh ingredients and good olive oil better not to use extra virgin, salt is all that is needed.

My grand mother made this exact same recipe, my mother made this exact same recipe & my mother use to make it for me & I made it for my son! My grand mother made this recipe around the time of the Civil War & I’m 70 years old & my family eat it a lot as well! Some times we put in other ingredients like cut up small sausage links, sautéed onions, bacon, even veggies! Also if you get your pan hot, not overly hot, you won’t get sick from the eggs, the heat kills germ in about 10 to 15 seconds since the eggs are spread over the bottom of the pan! Also if you par boil the potatoes & then fry them, they come out nice & crispy!
