17:53 I learned to make Baked Alaska in Home Economics class, over 50 years ago. First you use sugar and egg whites to make meringue, beating it until it's extremely stiff - you want it to hold its shape. Get a slice of unfrosted sheet cake and put a slab of ice cream on top; the ice cream should be slightly smaller than the slice of cake, so you can see cake all around the edge. Cover the sheet cake and ice cream with a thick layer of meringue, making sure to cover the ice cream thoroughly all around the edges, sealing it off where it meets the cake. Put it in the broiler just long enough for the meringue to start getting brown. Serve immediately. The meringue and cake insulate the ice cream, so it doesn't melt, but the meringue cooks just enough. Part of the pleasure is the contrast between hot meringue and cold ice cream. Not hard to make (with proper preparation), but the results are spectacular; it's a very good way to impress guests.

All of her friends back home LOVED them. Don't knock it 'til you try it! EDIT: The key is to roast the marshmallow really slowly over the fire so it's thoroughly heated and gooey on the inside and crispy on the outside, and then let it melt the chocolate before eating the s'mores. SO FREAKING GOOD!!! Don't be a barbarian like my brother and let the marshmallow catch fire and then put it on the chocolate. The secret of marshmallows is that they are bought and sold in the U.S. almost exclusively to use as an ingredient in baking. They are almost never eaten straight but rather used as a baking ingredient that supplies both sweetness and binding effect to stick other ingredients together. The toasting of the marshmallow is key to the s'more, and I'm willing to guess the reason why *most* of all marshmallows in America are bought and sold. When toasted, the interior of the marshmallow becomes hot and soft and gooey while the outside becomes crispy and takes on a caramelized sugar flavor. The ideal is to make these outside around a campfire because toasting the marshmallow over wood smoke specifically adds a woodsmoked flavor that cannot really be replicated in any other way. So that is why s'mores are on the list!

@whoahanantАй бұрын
Smores are extremely good for various reasons. They are made mostly around fires/outdoors. You only need 3 ingredients, marshmallows, flat chocolate, graham crackers and a stick/metal stick, so they're easy to bring outdoors. You place a marshmallow onto the stick and then roast it until brown, some people like to char the outside black though! Then you place a piece of flat chocolate, usually a piece of candy bar, onto a graham cracker. Slide marshmallow off the stick into the cracker by sandwiching the bottom cracker and chocolate with to top cracker. It should all slide off the stick. Then you just eat, can be a sticky mess sometimes but it's extremely good! Most people eat marshmallows melted, alot of people aren't huge fans of normal marshmallows. A good way to view marshmallows is more of an ingredient. Most people eat them in other dishes, not usually a single untouched marshmallow haha. There are special marshmallow places that make more unique and flavored marshmallows but those are not common treats.
@sharondornhoff7563Ай бұрын
Part of the charm of s'mores is that preparing one for yourself over the campfire can be tricky. You need to toast the marshmallow's surface and melt the inside, enough so the heat will melt the chocolate when you assemble the s'more, but *without* getting your skewer too close to the flame and setting the marshmallow's surface on fire. Do it just right, and you feel like you've accomplished something. So there's two kinds of satisfaction in one: a demonstration of skill *and* a tasty treat!
@thedarkgenious7967Ай бұрын
Ah, but there's an art to setting them on fire and getting a good shell of blackened char and a fully melted interior, without it falling off your skewer into the fire. Depends on your taste

S'mores are delicious, but they have not been the same since Hersheys changed the shape of their chocolate bars. It use to be thinner and divided in little squares, 4 of which fit perfectly on half a graham cracker, it made for the perfect ratio of the 3 items with the American size and shape of marshmallow. Also it's important to toast the marshmallow slowly and gently so as not to scorch but become completely hot and liquid inside and will then melt the chocolate when placed on top.

You are a bit hasty in judging the s'mores, I think. A toasted marshmallow is wildly different from an untoasted one in terms of texture and even flavor. (Toasting caramelizes the sugar, a bit.) Got a like from me because of the mind-blown reaction of discovering the brownie alternatives of blondies/ lemon bars/ peanut butter bars. There are a thousand other variations as well, involving fruit or crossing over with cookies, cheesecake and yes, there is even a s'mores bar.

S'mores: for anyone who doesn't know, a graham cracker is a mildly sweet cracker/cookie made from coarse ground wheat flour. They're often crumbled up to use as pie crust. One great thing about s'mores is their customizability. You can change the cookie and chocolate to your preference, I know I've seen people make them with Reese's cups instead of plain chocolate, I've heard people use thin mints or other pre packaged cookies instead of graham crackers, and I personally prefer peeps to traditional marshmallows. They get that little crispy caramelized shell and they don't have that starchy outside most other marshmallows have outside to stop them from being sticky because the sugar does that.

It was a staple during holidays on both sides of my family, and is now a favorite of my boys'.
