I have one suggestions here, if you are having order table and log table in same database. then just use trigger or audit log. which will give same output rather than to make complex. If we are keeping logs in same database then i don't find useful "Event sourcing". Yes, it will be fruitful when client are using some other database.

Using a guid for a clustered index is asking for trouble. It’s especially bad on a table with lots of inserts.

this is not at all Event sourcing. this z maintaining history record that u can easily do by RDM and HRDM schema, on every CrUD, transfer data RDM to HRDM, then update RDM. NO need of eventsourcing
