The payoff between actual time you spend working on birria and the flavor is really incredible. When it comes down to it, birria is pretty much just a glorified stew; the slow cooking over several hours does all the heavy lifting for you while you can be off doing whatever else, and you end up with an amazing result for not too much actual work. It definitely ranks in top three foods from Mexican cuisine for me.

It's actually not hard to make. It's a relaxed cooking experience with a lot of waiting while things slow cook is all. The best part is you can freeze that rich consume and use it for future meals. I like mixing it with other sauces and fillings to enrich enchiladas and Chile rellenos.
