To clear up confusion that people may have, the Hinokami Kagura IS sun breathing. It is disguised as a 12 stage dance in which the user dances from dusk till dawn. (Or vice versa,). Tanjiro learned that he could employ this 12 stage dance as an INCOMPLETE version of sun breathing, aka the Hinokami Kagura. The reason why it's WEAKER is because Tanjiro doesn't have the same BODY as Yoriichi's. He points out that there are multiple errors within his Kagura, i.e wrist positioning, wasted movements, etc. Tanjiro MASTERS these forms by removing these weaknesses IN combat, as he does with muzan. He simply Improves upon what he was originally using. This is due to the fact that Tanjiro, whether you like it or not is a PRODIGY, and picks up on things VERY fast. So no. It's not a plot hole if you read your source material.

Furthermore, he didn't MASTER it by watching his father doing it. He merely LEARNED it. Sumiyoshi passed it down, and as it was passed down many parts of the forms were forgotten, hence us seeing it having a lack in potency, less than it'd normally have.

Another correction being: Breathing forms ARE real. To a degree. Tengens sound breathing is very much real, as it uses bombs and he swings his swords hard enough to Create explosions. In a side bit in the manga, it does Infact state while breathing styles AREN'T real, they ARE conceptual and metaphysical to a degree. I.E. they are stated that while they aren't real, people see and FEEL them to be as such.

He notes that all of his forms contain unnecessary movements and incorrect angles that decrease his effectiveness and his body isn’t strong enough for sun breathing.
