I’m sorry you guys wanted the reverse seared chicken to win but we all simply agreed that the fried chicken was more exciting to eat in general than a plain salt and pepper chicken. We’ll try to pick stuff you guys like but the goal is to be authentic as possible when voting. Good news though if you wanted the reverse seared chicken to win here’s how you can combine it at home: make the reverse sear recipe, make either piccata sauce (the emulsified or traditional) and dress the reverse seared chicken after searing it, resting, and slicing. If you make the traditional piccata sauce, just be sure to deglaze the pan after searing and follow the same steps in the recipe here. Hope that helps! Love u!

Reverse sear should have won over fried chicken. It would have also worked perfectly with a traditional chicken piccata recipe. But since you chose the fried chicken, you have to change the piccata recipe, making it a different sauce than you had judged.

@BryanOP so there's people who like things by taste and there's people who like food by texture. My wife is a texture person. I'm a taste person, I've made amazing meals my friends loved and she hated. So having 2 judges for taste and 1 for texture is actually a really solid panel to get a well rounded feel of the food.

I add garlic to the searing oil Flour lightly, but cut into slices and don't really brown, just barely sear. Take out chicken sear more garlic and add wine and broth with capers and lastly lemon juice. Addicting!

I think turning it to fried chicken kind of ruined this. In fact, you, yourself talked about what would be the best fried chicken sauce. I personally think the reverse sear method would have been a better representation of a "best" method to cook a chicken breast. It seems more useful, versatile, and better than just making fried chicken. Besides that, loved the episode and it inspired me to try the reverse sear myself, later.

Josh, I hope you read this, your recipes are always golden (so far) but your adherence to the scientific method is what throws this content! (Still a great video, I just mean in regards to the rankings). You can’t control the human variable, your leftmost ranker was all over. But the REASON some things were perplexing is because you ARE adding confounding variables. Reverse sear beat out sous vide because you did it skin on. That’s a confounding variable. Fried chicken with skin on would have ranked better etc. anyway much love, keep it up brotha. Some of your recipes are my go-tos (like Tom yum )

Yes! Some even included sauces for some reason despite the whole intent of the experiment being to serve it with only basic seasoning and then decide things like sauces later. The breading on the fried chicken should also be considered a confounding factor and should have inherently disqualified it from consideration. Not to mention it just being in poor spirit since he already did a whole episode of just fried chicken. Is that 'best method' of fried chicken not best anymore? Which is the real 'best breast'?

I think you should do these taste tests blindfolded. I believe that your judges may have a bias towards bland looking chicken even tho it can be very tasty. I think that's why the scores are all over the place.

Unless I'm specifically cooking on the charcoal grill, I always cook my burgers, steaks, and chicken breast on a george foreman. Chefs may look down on it, but I am always happy with the way they turn out, and it's so much easier to clean than a pan.

I cooked Tuscan chicken, same recipe, onion and garlic, sundried tomatoes, cherry tomatoes, spinach, herbs, SnP etc.. But I added chopped and sauteed middle cut bacon, smoked and sweet paprika, a touch of milk, some dried mushroom soup powder and regular cheddar.. Might be the best thing I've ever cooked. 11/10 Absolutely unreal. Panko crumb a chicken breast and fry it, ALL OF YOU, then pour the sauce over the top. It's beyond incredible.

I love this study, Josh! Hands-down, my favourite would be the fried chicken. Years ago, I developed a technique of adding minced onion to the flour coating. When fried, it adds that sweet, caramelised "onion rings" flavour. It's really good. I would encourage you to try it. Cheers!

The real secret to good chicken breast that isn't dry is to use a meat thermometer to make sure it doesn't get over-cooked. Don't rely on cook times and oven temps given in a recipe since every oven and cut of meat is going to be slightly different. The only reliable way to know how well-done your meat is is to check the internal temp. Cook it to 165* and then remove it from heat immediately. If you don't want to be fussy with the thermometer then just stick with dark meat. Dark meat is more forgiving and can handle getting cooked to a higher temp - it even benefit from it.

hey josh! a pro tip for the air fryer: to lessen/get rid of the "moist" taste on the chicken, you should toss it in for a few more minutes after its done cooking. how long really depends on your fryer :)

Deep fried chicken is virtually unedible for me. My digestive system simply cannot handle it. I have had extreme gastro-intestinal distress in the last few years, the very few times I've eaten fried chicken. However, I can LIVE on smoked chicken thighs. I have a pellet grill and have eaten the crap out of slow cooked smoked chicken thighs this summer. It's so easy to make and honestly they work well for my body. Also just ate slow cooked chicken thighs made in the crockpot. Extremely tender and moist, and extremely easy to digest, flavorful and delicious and very low work involved. Super easy.

I love my George Foreman grill. When cooking chicken breast, one needs to pound the piece until it is the same thickness throughout, lightly oil it, and leave off any sugar containing seasoning as it will burn. Finally, figure out the right cooking time to just get the chicken safely cooked without overcooking.

I usually sear as it's the easiest way how to cook at the dorm, but I do it slightly different way: 1) Season 2) Pan with oil, high heat 3) Let the meat get some sear from both sides 4) Lower the heath to mid/low mid, add a bit of butter 5) Cover the pan with a lid 6) After 4 minutes I check the meat and flip it 7) 4 minutes again, then take the lid off 8) Finish sear for the color Meat is juicy, not dry, usually perfectly cooked, tastes good.

Tandoor is literally a dish of its own in my country (called "Jujeh") and it's very important how u season it so it's soft, one of my favorite foods!

Hi Joshua. When you have a charcoal tandoor then please try utilising that tandoor. You can make a lot of varieties of Indian bread, tandoori chickens and lambs. We want to see that. ❤
