Everybody always says the same thing. On the front end its "Wow that seems like a lot of trouble." On the back end it's "That was the best steak I've ever eaten!" There's never a "I did it and...meh." This was a fun video from the opening to the end. You guys seem like you've known each other all your lives. Loved it!

You guys get an A+ on this one. Funny, Fun, and the steaks were gorgeous. I know there are many ways to grill steak on many different grills, but this way is at the top especially on premium cuts of meat which you had. I really like that new thermometer too. So why would the grill grate not be hot after it's already been over the direct heat one time?

It cools while it’s off the heat enough to not cause char marks on the meat. The goal with this technique is to sear from heat only and not grates.

Hi, Paul! I used approximately 1/2 teaspoon of kosher salt on each side of each steak and then left it on a rack uncovered in the fridge for approximately 36 hours or two nights before the cook.

Is "Cold Grate" a misnomer? Because there is no way that you can spin that grate over a hot bed of coals and it goes "cold"...maybe less hot but not cold.....lol

Yes, less hot is a good way to put it. It’s cool enough to allow the fire to cook/sear instead of the grates.
