*Ingredients:*
- 1 kg (2.2 lbs) beef (cut into cubes)
- 3 onions (finely chopped)
- 3 garlic cloves (minced)
- 3 bell peppers (sliced)
- 2 tbsp tomato paste
- 1 can diced tomatoes (400g / 14 oz)
- 500 ml (2 cups) beef broth
- 2 tbsp paprika powder (sweet)
- 1 tsp caraway seeds
- 2 bay leaves
- Salt and pepper to taste
- 2 tbsp vegetable oil
*Instructions:*
1. Heat the oil in a large pot and brown the beef on all sides. Remove the meat and set it aside.
2. In the same pot, sauté the onions and garlic until they are soft and golden brown.
3. Add the bell pepper strips and cook for another 5 minutes.
4. Stir in the tomato paste and cook briefly.
5. Add the diced tomatoes and beef broth, stirring well.
6. Return the browned beef to the pot, add paprika powder, caraway seeds, and bay leaves. Season with salt and pepper.
7. Mix everything well and bring to a boil. Then reduce the heat, cover, and let it simmer for about 2 hours until the meat is tender.
8. Stir occasionally and add a little water if needed.
9. Serve the goulash hot, ideally with fresh bread or potatoes.
*Tips:*
- For extra flavor, add a splash of red wine before adding the broth.
- Let the goulash sit overnight - it often tastes even better the next day!
