Put your utensils in hot water before you whip the butter cream and when you spread it around. You will see a big difference in how soft the butter cream gets.

Pro home baker tip (if there is such a thing as a professional home baker lol): yes use proper butter to grease the tin, and then LIBERALLY dust the inside of the greased tin with plain flour. Get that flour in there, baby!. Finally, tip the excess flour either back into the flour canister or the bin or the sink depending on skill levels, and you have a *buttered and floured* cake tin. Add the raw cake mixture and bake as normal - you can thank me afterwards, as your baked cake slides effortlessly, without sticking at all, out of the cake tin. The other option is to cut a piece of siliconised (NOT plain greaseproof - unless they no longer sell plain greaseproof in the UK; it's getting hard to find here in Australia) baking paper to the exact size and shape of the bottom of the tin and line the pre-greased bottom with it. Much more of a faff, but it works very well.

What's up, Joel?! It's Jeff from the Scotland trip! Wanted to give you a little boost of encouragement, dude! So I've totally changed my life around, 4 months sober and tobacco free now, and I was overweight and out of shape on the trip, hadn't exercised in over 8 years since my fiance was still alive. Exercise was agonizing to think about but I started with nightly walks and kept pushing harder, then I got into a gym and got with a personal trainer 3 times a week, started seeing results and pushing harder, now I'm in there training 5 days a week, but still exercising 3-4 hours everyday, 7 days a week, and with at least an hour of cardio everyday. I've gone from overweight to in the best shape of my life and I feel like a new man. I know my routine is a bit extreme for someone with a career and family, but you just got to designate that one day a week at least for an hour of cardio if that's an area that you feel is lacking. I believe in you! You can do it! You just gotta give yourself that push! If I can do it anyone can! Anyways, like I said, just wanted to give you a little boost of encouragement!

When my oldest was 14 he made a Victoria Sponge for our Easter dessert. First time I’d ever had one, and it was delicious! I totally hear you on the kid activities. My oldest is involved in choir and theater, my youngest in band, and boy things do get busy! It’s always nice when we get a breather on school breaks.

I didn't know about the "R insertion"...I noticed kathy hipperson doing that in the "mrs crocombe" videos on english heritage. lovely video, joel. you can also sprinkle sugar (GASP I know) of sugar over the buttered pan for the victoria sponge too. it seems to release better

Did you put flour in the pan over the oil/low fat butter? And you probably didn't put enough of the butter. The cake would still be delicious even if it is ripped apart 😄. Sometimes when that happens people have just put it in a big bowl and just layer everything and use a big spoon to scoop it into small bowls.

I love to bake as well. A trick that works for me is to grease the cake pans, then put in a round of parchment paper (you can buy them precut which is wonderful), grease the parchment and then dust the pan with flour (or cocoa if its chocolate).

Cut a round of parchment paper for the bottom. Lay it in after you butter (real thing!) the tin. Then butter the paper too. (I usually just use a paper towel to spread the butter around, then throw it away.) Well, thanks to the faux pas with SloMo, the vlog was only 15:31. A good thing. LOL I usually play "talking vlogs" on 1.25 xor 1.5x speed to save me time. It all works out! LOL Except for the sound. You get the hang of it. You learned your last camera! Have a great week, Joel. 💛

I can't say the new camera is better (because, honestly, I didn't pay that much attention between the two cuts). But I will say, the new camera footage is very, very clear and very high def. It looks wonderful. As far as claiming your gas (petrol) I'm not sure how it works for British taxes, but in the US you would log (literally write it down) your milage for work related expenses and you are given a certain amount per mile you can deduct. You would also log any mass transit/train/Uber costs associated with work related expenses. These (in the US anyway) would all be legitimate expenses for work. I would imagine it would be the same in the UK.

I was taught that to make a cake not stick ... Grease the pan (use butter or shortening) then sprinkle white flower around the pan - Shake and rotate the pan until it is completely dusted with flour - dump the excess flour so all that is left is what stuck to the grease - Then pour in the batter. Joel sweetie, here's a baking tip from someone who started baking when she was 5 ( am now 69)... Grease your pan(s), cut some Parchment Paper to size and insert into pan...lightly grease the parchment paper in the pan, pour the batter in, bake.When inverting the pan, cake will come out easily... parchment paper will be on bottom of cake. It will easily pull off. No more broken cake hon...also i never flour my pans when doing this and never have any problems. Good Luck...hope this helps you.

I'm sure you will get used to the camera soon and all the tricks to make filming better for you. I noticed that it blurs out people in the background so that's nice. How frustrating that it flips to slow-mo so easily though. Hopefully, it will be easy to avoid once you are used to it.

In America we have PAM which is a no calorie spray on oil that helps with sticking. Joel did you read the instructions on you new camera? It really does help. Last comment I know was a throw away, but Joel there is nothing Stupid or little about your life. Coming from a 67 year old Californian.

Funny, I'm from New England and evidently in certain sections we put "r's" on words like Cuber (for Cuba) and similar. When I went to university everyone said, "oh we know exactly where you're from" because I used to put "r's" on the ends of words ending with an "A". That cured me. Don't do that any more. Anyway, Joel - what is a "hit" class? That puzzled me.

13:18 yeah that's called a non-rhotic accent. In places like Manhattan, Los Angeles and the San Francisco Bay Area, which is the "Standard" or "non-regional American accent" (basically the American equivalent of "received pronunciation"), we have a rhotic accent, so we pronounce "Taylor" and "Tayla" differently (as you demonstrated). It does sound kind of weird to us the way you guys say things like "America" and make it sound like "America-er" lol. We know it's not done intentionally. It is endearing!😀 There are some areas of the USA that still use a non-rhotic accent, though, the most notable being the Boston area. In Boston, if the person has the stereotypical "Boston accent", "heart" and "hat" are nearly indistinguishable. 🙂(well, I guess a fellow Bostonian could hear the difference. lol) I've always wondered when exactly the American accent started deviating from the British accent. We know from Edison's first audio recording that, by then, Americans already sounded different from the British. I wonder if it was already different in 1776? In 1776, the British colonies in North America had already been there roughly one hundred years.
