Because despite seeing the new ghosts & Hellen as useless pawns, i think he still cares for the Boos. So he may still love them & he hid them all in Luigi's Mansion 3 so Luigi doesn't find them all. So he still cares for his kind deep down.

Based on concept art, King Boo originally could've had a much larger role in the Mario Bros. movie too. One piece depicts him in his Luigi's Mansion appearance in an all-out clash with the good guys, but understandably, if more sequels are planned, they might want to save him for a more prominent role down the line
