Tendon is actually low in fat and high in protein. It is a good alternative for those who want the sensation of fat in their mouth minus the actual fat. The fatty texture of it is due to collagen.

Yeah, I don't think there's any fat at all! It's just connective tissue. I've seen it cooked (in Mexican food) where it was chewy and entirely transparent. Strange waxy texture. It wouldn't be my first choice! But these hawkers seem like they know how to cook. I would have eaten anything we saw today, and some rice to go with it. Our food/travel guys never seem to want to eat rice, but that pig's knuckle (say) seemed like it would have really gone well with a bowl of rice! Or maybe a steamed bun. I thought for SURE Sonny was going to get something with a FISH HEAD on it, since that seemed to be in a few signs.

If exotic meats, there is a turtle soup stall, frog porridge stall, stingray stall, various shellfish , black chicken soup, various pork, beef, chicken, mutton innards , shark meat Lor mee, century egg porridge, preserved meat dishes, chicken feet in Thai sweet sauce , mutton bone marrow, mutton brain soup, all in same hawker centre. Yeah, it’s that big.

Sonny i am so excited that you are in Singapore!! As a singaporean, i highly recommend hawker food: Hokkien mee, Nasi Lemak, Chilli crab, Yong Tau Fu, Roti Prata!! Most cuisines in singapore are influenced by chinese, malay, and indian culture! Some of them are also inspired from dishes originated from Malaysia/indonesia etc. Basically a mixture everything in South East Asia all together :)

So, I copied your comment for things to try while I’m there. ☺️ Thank you for sharing! I knew about chili crab as it’s easily the most famous Singaporean food, globally. I’d also like to try salted egg yolk crab, is it as good as chili crab? I watch another KZbin creator who is from Singapore, so I’ve seen some of your more famous foods in their videos. But they mostly do content of the other ethnic foods you can find while in Singapore…so again, thank you for your recommendations. ✌🏻🥰😊

@@melissadunton3534 Salted egg yolk crab depends on how the chef cooks it, some of the sauces are wet while some are like of a sandy texture (dry?). Salted egg yolk flavor was a huge trend in Singapore, you can try Irvin's salted egg chips or fried fish skin (It's a local brand, i think there is one store available in the airport). Hope that helps!

Absolutely love the stewed tendons, had that growing up, absolutely delicious. The fish maw is actually rather expensive and you’d see it often during the lunar new year festival, my mum would cook a large pot of shark fin soup but substitute the fin with the fish maw. This old cucumber can last longer after harvest, it has many names in ENG like winter melon/cucumber and belongs to the net cucumbers (skins look like it). Most types can be found in the Himalaya region, it is great in a chicken/other meat soup with cordyceps etc.

You should try chopped up cucumbers (with the skin on) with salt sprinkled over it and drizzled in balsamic vinegar and olive oil or Italian dressing. It’s a great snack for a hot summer day!

Old cucumber is just an overripe / fully ripe cucumber that has lost its crunch factor. Cucumbers are usually picked crisp and unripe. We mostly don't eat the skin. The flesh would be amazing as it would have absorbed all the flavour of the soup. Fish maw is FRIED air bladder of the fish. Hence its bubbly chicharon-like texture.

I love fish maw soup!!! Had it while in Oklahoma of all places! I’m not keen on tendon…it’s not the taste, it’s the texture. It does taste good, I just cannot get past the texture as it’s so gelatinous. Idk…maybe with the gravy I’d be able to tolerate it. I must try it if I get the chance. Usually locals don't eat the skin of the old cucumber. The skin is there to keep the flesh intact so that it would not "disintegrate" into the soup.

8:55 is not a kumquat. It is a calamasi lime. A small lime that grows amazingly in South East Asia. Used widely as a condiment for sour notes. Also very commonly sold as calamasi lime juice drink.

Should go Hong Lim complex market. It have more authentic food there like Wanton noodle, curry chicken noodle, bak ku teh, prawn noodle and other special food like crayfish hor fun. For the pig trotter, you should try vinegar pig trotter. The taste is even better. Japan Behar has 1 of the best vinegar pig trotter. Anyway Singapore is well known for the Suez canal of money, food, and everything. Hopefully 1 day i can join 1 trip in Vietnam
