So I Don’t know that anyone have told you about this info but basically that old lady with white hair that is seen at roughly 22:30 mark of the video Is the owner of Như Lan. (Nguyễn Thị Dậu or as people call her Dì Gái (Which is Mrs. Aunt I think) ) She started out small selling bánh mì and going around learning from all the best chef/baker there is around the city In 1968 was when she truly step up her game, after saving enough money she then bought a small kiosk which is where she started experimenting and perfecting her method on making more variety of food including Moon cake which started attracting more customer due to the unique taste that couldnt be found anywhere else (She did basically everything on quality control, making sure to always get the best ingredients there is around, tasting them to make sure there won’t be any difference between batches she made) After a bit more ups and down finally bought the place that you guys are currently eating now The best-seller item at the place is Moon Cake, during Moon Autumn Festival it is estimated that she sold around 60-80 tons of Moon Cake but that was now Back then her Moon Cake was famous all around spanning across the South and up to The Central Highland. But as time went on a bit more to the 90s or so, more company came out with their own Moon Cake with more affordable price so I guess that’s one of the reason.
