Hello Matteo. Thank you for all your videos regarding moka pot brewing. I am doing a lot of testing to try to get this right. One thing I cannot figure out is how to get more than about 55% brew yield. I really hope you might have some suggestions. I have a 2 cup moka induction. I have been brewing with 120 grams of 90 C water and 12 grams of coffee. I am using Lavazza Super Crema ground at 60 clicks with a Kingrider K1 grinder (the moka setting per Kingrider). I have tried using room temp water, brewing at higher temps so the brew flows a little faster, lower temps so the brew barely trickles out. I tried using a more course grind. But through all these tests I never get over 57% brew out. The most I ever got was 69 grams. The brew is getting to about 23% extraction with around 4.2% TDS and tastes a bit harsh. Hi Matteo! Can you please make a video or just explain to me how and when to use the reducer? I have a 2 cups GB Kitty Oro Moka Pot and it came with a reducer and I have no idea how to use it correctly. I believe it would really help me since I would only really use the Moka Pot for 1 cup instead of 2 and I believe that's where the reducer comes into play but I don't know how to use it! Thanks!

I don't agree. Most of the time all of the water in the chamber comes up and after I pour out the coffee, when I rinse the pot under cold water it hisses and steams. Then after a while a problem emerges where all the water doesn't come up. I pour out the coffee, run it under cold water and it does not hiss and steam. Then I find coffee in the lower chamber. It seems to me there is something wrong when that happens.

You have coffee in the chamber because you cool down the hot water so from an environment with higher pressure it goes back to standard pressure, that will suck the remaining water left in basket and upper part bringing down some fine particles. If all the water in the chamber goes all up, then you don't have this problem. But not all the mokas and baskets are the same.

Thanks for the comment and for the compliment :). That amount can change depending on the coffee you are using and also grind size. Coarser grind retain less water, finer more. Also depends on the kind of beans you using

Alright, the problem can be, heat source too high, coffee ground too fine or too coarse. A suggestion I can give you, is remove the moka from the stove once the coffee start to sputter at the beginning, that will calm down the water, after a few seconds place back the moka on the stove at low heat, you will see the flow coming put more regular, if it starts to sputter again, repeat the process of taking the moka off the stove, wait a few seconds and then back on

I think it is a design defect because some moka pots by Bialetti they do not leave small amount of water at all, perfect, I have a moka pot that does not leave any water at all, perfect

That can be also possible, if the basket is slightly shorter, you have more water at t he bottom.

Quick question, I recently started using a moka pot, and even tho it works, after brewing, some of the coffee grounds leak into the coffee chamber. Is there something I can do to avoid this? Not sure if it has to do with the hear, the grinding of the coffee or general preparations like maybe not padding down the coffee or something. Any tips or suggestions? I don´t want to filter my coffee after it´s supposed to be ready

One reason can be that the coffee basket can not hold the pressure correctly inside the boiler. You will hear the leak too. My solution was to measure the coffee cup OD and go to a hardware store, then search for a 1mm thick O-ring with slightly smaller than the coffee cup measurement. No more leaks.

@@Ahto42see if aeropress filter fits otherwise you can search for larger paper filters, if you can’t find bigger paper filter you could cut the right size using bigger flat papers. It will take a bit of time cutting them so it depends on how much you want to brew with paper

1) could be the coffee is ground too fine, it should be in a middle of espresso and drip coffee grind size. Could also be the gasket is not sitting right/broken 2) check first if the gasket/seal is broken by running a moka pot cycle with just water, no coffee. If the water comes up, try a coarser grind with your coffee 3) ptfe tape is not needed for moka pot, not advisable

Does the shape and volume of the cup we drink the esspresso from affect the taste and the experience? Serious question. I always felt that there is an ideal cup for drinking esspresso.

absolutely! it's scientifically proved. the ideal cup for espresso usually should have a thick rim, that increase the mouthfeel sensation.

I bought a moka bot months ago, i was making my coffee by adding only milk in the bottom chamber annd it was so good , *but recently the milk is coming out without squeeze/extraction the coffee and its taste is undrinkable*

You ruined the Moka pot. You aren’t suppose to use milk to brew coffee. Your tube is clogged more likely. Clean by boiling a 50/50 mix of water and white vinegar.
