Here's the recipe for those of you who want to make this masterpiece of a cake. Ingredients: • 5 Lemons • Lightly/Unsalted butter • 600ml of double cream • Tin of condensed milk • Pack of gingernut biscuits • Flake (for garnish) • Dark chocolate ginger cookies Equipment: • Rolling Pin • Big Bowl • Cake Tin • Pot/Bowl for melting butter • Bowl for lemons • Grater • Juicer • Cutting board • Sharp knife • Whisk (Preferably Electric) • Big bowl • Wooden spoon Method: • Pour the gingernut biscuits into a bowl and crush the biscuits with a rolling pin with loads of small bashes until the biscuits are reduced to a fine powder. • Add 2 dark chocolate biscuits into the bowl and bash them into the gingernut biscuits. • Melt 2 big chunks of butter and add it to the mix. • Put the mix into a cake tin and spread it out evenly. • Gently pat all of the mixture with a rolling pin until the mix is dense. • Put the cake tin aside and grate lemons into a bowl with the side of the grater that has the tiniest holes until you see the whiteness of the lemons. • Put the lemon zest aside and chop all of the lemons in half. • Juice all of the lemons (be sure to take the pips out) and pour lemon juice into the bowl of lemon zest and put it aside. • Pour double cream into a big bowl and whisk until it is thick. • Add condensed milk and lemon juice & zest to the cream. • Gently whisk the mix until the ingredients are fully mixed together. • Stir the mix with wooden spoon, turning the mix over. • Spoon the mix evenly into the cake tin, on top of the biscuit base. • Put the cake into the fridge for a couple of hours until the cake is firm enough to pop out of the cake tin. • Smash flake on the table and add it evenly on top of the cake for garnish. • Cut cake into slices and enjoy! :D If I missed anything, be sure to let me know and I'll edit my comment. I made this, it was pretty decent. I'd give it a 7.5/10. The only issue really was that the lemon flavour was too strong. I only used 4 lemons instead of of 5 and it was still too lemony. I would suggest 2 or 3 lemons at most. Also you can get a machine that grinds the biscuits so you can skip that first step
