The original method in the Barista Championship was to only chill a part of the shot, I believe the first third of your shot time, because that is where the volatile flavor molecules are extracted. Apparently, continuing to chill the extraction past that point led to worse flavor and as you said, cold espresso.

Meanwhile I just pour a spoon of Nescafe or Indocafe, a scoop of sugar, and a sixth of evaporated milk in my tall flask, stir it with a tall metal Korean spoon and make the water mixture just less hot and above warm so I could immediately enjoy it economically over a long time. If ur trying to prevent oxidation try shortening the path from the portafilter to cup. Spreading the liquid over a large surface so it has More contact with air should result in more oxidation.

I do my pourovers on to ice, because it instantly stops the extraction (like, if I do the same exact thing without ice, let them both reach room temp, the iced one will taste fruitier because it didn’t overextract) Remember, the coffee soluables extracted are still sitting there in the brew, and it was Just at brewing temperature, those soluables are still cooking until they’ve cooled down enough. Just like how cold brew can extract slowly, slightly cooler than boiling water is going to extract slightly slower than boiling water, but it’s *still* extracting, (like how you can have a brew that turns bitter if you keep heating it, so you’d take it off the burner, same idea)

I tried and liked this technique for very fruity, light roasted coffees. Traditional Espresso still tastes best with classic the technique and especially dark roasts need temperature in order to not taste too bitter. The sensitivity to bitterness increases with lower temperatures. One of the reasons, why Gin Tonic tastes so balanced, when cold and horrible, when at room temp.

If you’re happy with your Keurig and aren’t interested in other coffees, then for you there is no point and you can save yourself the trouble! For other folks though, espresso making is as much part of the hobby as drinking the espresso afterwards. They like picking out the differences between styles, beans, grinds and such and between all of them generate preferences. The act of sharing that hobby with others by serving them coffee is a part of the fun too :)

Frozen can be used hyperbolically to describe something very cold (from Oxford Languages). Steel normally isn't cold. When in a freezer, steel gets very cold, therefore frozen is a completely correct term to use. At least if you're using semantics, maybe read the dictionary?

Volatile compounds evaporate (you're probably saving some of these by cooling the extract down, making them less likely to evaporate). Compounds that react with oxygen in the air are said to oxidise (happens slower at lower temperatures, so again, possibly reduced by passing over chilled metal ball). Separate things.

If anyone is curious, the basics there are a lot of tea leaf, a small amount of water, and a very short brew time to make non-bitter and powerful shots of tea. When we pour, we pour into a small glass pitcher, and then into the teacup. This does exactly the same thing, cooling it down to keep those top notes from steaming off the tea when its too hot. This is really cool!

I have a really unique way of getting extra flavour in my coffee. I used yesterday's unwashed tea spoon to measure out my Nescafe Gold Blend. Works a treat

Reminds me of that tutorial on how to prepare water, where they chop it up and then fry it and dilute it with water then freeze and blend the water and ultimately end up with water.

I appreciate that he said, “the idea here,” instead of, “it does,” do the thing. Bc I seriously doubt it does much at all. U prolly need a more effective rapid cooling method to do this (the oxidation prevention) to a noticeable degree. Idk. I could be wrong. Just my first thought without any further knowledge of the topic.

This is my second favorite method for ensuring maximum flavor. My first is putting my coffee beans in a 100% cotton pillow case, tying the opening of the pillowcase with strips of burlap and driving them by a field of clover during a full moon. Sometimes I roll the window down while I drive past if I'm wanting something a little different.
