My all time favorite food roasted pig ( Lechon) and also seafood. Every time i visit my hometown always get some Lechon, with puso ( plain rice wrapped in coconut leaves and cook it) and pork sausage with sauce. Yummy 😋😋😋

Damn my family lived there in Pardo, but I am not aware of lechon restaurants ... My mom would just ask somebody if she wants to eat lechon in whatever occasions. I was 16 and was in my high school days when I saw them roasting pig right in front of our house, thats a civil way to do it.

Most Filipino dishes are in the salty side because we always accompany every dish with rice every time we eat our meal. Rice tempers the saltiness of the dish. Rice is life here in the Philippines. Because if you mae the dish less saltier and you eat with rice, the dish wouldn't be that savoury anymore as rice drowns the flavor of the dish.

I heard that Lechon of Cebu is the best, but I couldn't distinguish the difference since I grow up eating lechon. Every Christmas, fiesta, birthday and important occasion there is always lechon on the table. I think the only lechon that is a bit inferior in taste and quality are the ones we have here in California. I was told they're cooked in the oven, and sometimes they ruin its taste by putting too much herbs and spices, some of them produce a combination of weird smell. In our province in the Philippines, I just a whole bunch of lemon grass and onions and spring onion leaves and of course salt.

would have been nice to see the whole pig roasting process from beginning to end.you know like the lighting of the coal or wood?what wood they use to cook?how the heat is regulated?what temperature they keep cooked the meat at?whether they have to move coal or wood back and forth in the pit to achieve even cooking?what or who is turning the rotisserie ?all these question would help make watching more enjoyable.

They use wood charcoal or coconut shell charcoal...they move the charcoal about half meter to one meter...one person can turn for three hours but nowadays electric motor is used...the secret is always put oil on the pig's skin to control the skin burning...
