On the first one he says to put the iron bars all the way to the bottom and I know that does not work, off camera it is likely he tried this and instead of recording another take, he lazily breaks the bars that are in the water and you can see them missing. He does not say he made a mistake but instead acts as if it fully works, this is why I dislike this kind of over the top kids youtuber, they try to get away with less work and lie to their audience.

you can make it with a command block that makes the armor stand invisible... and you can name the armor stand Dinnerbone to make it upside down. Place that armor stand on a stone pedestal, make the armor stand invisible, name it Dinnerbone, strike the right pose, and somewhat get a sword stuck in stone (though it may not stick straight into the stone).
