Maybe because all the bugs and errors from previous and future updates were "rewritten" into Minecraft 1.7, and that's probably the reason it was released only as a snapshot, and not an official version

this is a developer version used all the way from the start to this day where they test things before releasing the newest versions and snapshots. they leave the bugs and old things in this version and add the fixed ones to the game. I also think that when you found the wither rose it was from the year it was actually added but on this developer version. (disclaimer: this is just my theory which i think could be true)

I think mojang was using the 1.7 version for tests to see how it would work, mojang used this world to make updates in the game, he was still figuring out how to properly make the terrains so he put them all together to see how it would work.

I haven't watched the video all the way through, but I may have an idea as to why Jordan already has items at spawn. Maybe when he booted up this version of Minecraft, he somehow gained access to the save file of another user. Maybe even a dev, if the Debug Stick is anything to go by. How else would you explain the resources already present, the used pickaxe and the used sword?
