翻轉焦糖鳳梨椰子糕(6时固定烤模)
1、鳳梨200克,切0.5公分片,放入6吋固定烤模,重疊環狀排列整齊。
2、厚底鍋放入白砂糖40克、水15克,小火煮至淺咖啡色(變色前不可攪動糖液),加入切小塊奶油50克,並不斷攪拌;加入百香果汁10克、黑糖7克,不斷攪拌;熄火;加入¼小匙芫荽子粉,攪拌均勻,倒入模型。
3、取一小盆,加入玄米油35克、糖30克、鹽1克,攪拌約3分鐘;接著加入椰奶140公克,攪拌5分鐘至完全乳化。
4、取一攪拌盆,在上面放篩網,篩入高筋麵粉100克、杏仁粉20克、泡打粉6克,攪拌均勻。
5、預熱烤箱至190度C。
6、將步驟3 乳化油加入 步驟4粉料盆中,用刮刀混拌至無顆粒。
7、將麵糊倒入排好鳳梨的模具中,稍抹平。
8、放入烤箱180度C,烤25分鐘。
9、取出烤模,室溫冷卻半小時或至微溫後,取盤子蓋在烤模上倒扣脫模。
Upside-down Caramel Pineapple Coconut Cake (6-inch Fixed Baking Pan)
1. 200 grams of pineapples, cut into 0.5 cm slices, put into a 6-inch fixed baking tin, and arrange them neatly in overlapping rings.
2. Put 40 grams of white sugar and 15 grams of water in a thick-bottomed pot, cook on low heat until light brown(do not stir the sugar solution before discoloration), add 50 grams of diced butter, and keep stirring; add 10 grams of passion fruit juice, 7 grams of brown sugar, and keep stirring; turn off the heat; add ¼ teaspoon of coriander seed powder, stir well and pour into the mold.
3. Take a small pot, add 35 grams of brown rice oil, 30 grams of sugar, and 1 gram of salt, and stir for about 3 minutes; then add 140 grams of coconut milk, and stir for 5 minutes until it is completely emulsified.
4. Take a mixing bowl, put a sieve on it, sift in 100 grams of high-gluten flour, 20 grams of almond flour, and 6 grams of baking powder, and stir evenly.
5. Preheat the oven to 190 degrees C.
6. Add the emulsified oil in step 3 to the powder pot in step 4, and mix with a scraper until there are no particles.
7. Pour the batter into the mold lined with pineapples and smooth it slightly.
8. Put it in the oven at 180 degrees C and bake for 25 minutes.
9. Take out the baking mold, cool at room temperature for half an hour or until it is slightly warm, then take the plate and cover it with the baking mold upside down to release the mold.
