Gum Arabic is a good choice. It would be less lumpy if you heated the mix just to a boil, then let it cool before using. A 50/50 mix might be a little thick. 1/3 water, 1/3 gum Arabic, 1/3 corn syrup might work better. That will make a nice polish, but they can turn dull if stored in a humid environment. Store-bought chocolate items are polished and then sealed with food grade shellac (confectioners glaze).

Thanks for the question, yes I did all temperatures from tap water to heated water. Not much difference but with heated water I needed to let it cool down before using it on the chocolate

This is a very interesting video. After all your videos the coating process, I think it is better just to purchase them. The process is excessively time consuming. I will NOT be buying the Aieve Snack Coater. Interesting idea though.
