Lauki/Dudhi ka Halwa Recipe
Ingredients-
500 gm Bottle Gourd | लौकी
1.5 Tbsp Clarified Butter | देसी घी
150 ml Milk | दूध
400 gm Mawa | मावा (खोया)
2.5 Tbsp Sugar | चीनी
1/4 Tsp Cardamom Powder | हरी इलायची पाउडर
1 Tbsp Mixed Chopped Nuts | मिश्रित कटे हुए मेवे
Method -
Take a fresh bottle gourd and peel it using a peeler
When peeled wash and dry it before grating
Now using a greater great all of it, use the thickest blade for grating the bottle gourd
You can see how I have grated the bottle gourd, it will start to release it's water
Now heat any thick bottom vessel or a kadhai, and add clarified butter into it
When the ghee is hot add all the grated bottle gourd into it and stir well
All the bottle gourd should be coated with ghee
Now cook and roast it on a medium to high heat for 2 minutes while stirring occasionally
Bottle gourd will start to release its water, keep cooking till all the water is almost evaporated
It will take 3-4 minutes
When the water is evaporated add 150 ml Milk to it and stir well
Let it cook on medium to low heat now for 10-12 minutes, while stirring occasionally
Let the bottle gourd cook properly with the milk and become soft
After 10-12 minutes all the milk should have cooked, if not then cook it further for a few minutes, keep stirring occasionally
When all the milk is soaked and halwa is almost dry and cooked add fresh mawa (condensed milk fat)
Now on a low heat crush and mix the mawa with the halwa
Mawa will start to resolve by the heat, keep stirring
Keep cooking and mixing while scraping for 10 more minutes or until it starts to separate the ghee and not stick to the bottom of the pan anymore
When the ghee starts to separate, it's time to add your choice of sweetener, add the sugar
Now stir well and let the sugar melt and cook for another 2-3 minutes while stirring continuously
Stirring continuously is very important as sugar should not burn and halwa should not stick to the bottom, or it will spoil the taste
Towards the end, increase the heat to medium and stir rigorously for a few seconds
Now add the green cardamom powder and stir well
Now switch off the heat and add chopped mixed nuts of your choice and mix
Your Lauki ka Halwa is ready to be served
Serve hot and garnish it with some more dry fruits and some silver warak
