Probably the best possible hat to get for hiking is a boonie hat. It protects your neck and ears, plus it's lighter and folds into a way smaller space than a baseball cap. My boonie can also fit a wool beanie underneath it, for when I need both warmth and protection from the sun.

Not a lot of ventilation, I am thinking this is for a casual stroll? ... Live in Canada around -25c with wind with a 25 minute walk can get you fairly hot and ventilation is a 100% must. So saying I am going to do everything to keep warm can undermine the overall idea of layers. Example ... 1 Polly T-Shirt, 1 Polly Sweater (Base Layer), 2 Merino Wool (Base Layer), and an outer shell with ventilation like a cycling jacket will do perfectly fine. Without the ventilation you Will overheat so putting on mid layers are typically not a great idea of you are active. A soft shell jacket (active wear) is a good solution for a mid layer or if it gets colder.
