Will adding compost and worm castings in December bring my maples out of dormancy? I’m in zone 9

Are they for syrup production? When do they normally break dormancy? Applying castings or tea in the fall with Soil Vigor will increase microbial activity and can potentially warm soils faster. As to “forcing” a dormancy break we cannot say. One thing we have observed is that adding biology allows the plants to express their physiology in a more ideal manner and that can change usual timing… but we aren’t in control of that. Generally the plants know better than we do on these matters. If we give them all they need they will break dormancy when it’s ideal. They have a robust programming and they even have memory.
