Personally, I prefer Azure Moon, since you can save the most characters by recruiting them. The only ones you can't recruit in that route are Claude, Edelgard, Hubert, and Jeritza.

Each route has a different a different idea on what the main focus and theme of the game is. Azure Moon is about morality and saving the continent from war. Crimson Flower is about revolution and breaking free from corrupt institutions. Both AM and CF are inherently about about the war though; likely why they share a final boss theme. Verdant Wind is about discovering the truth about the things behind the scenes that led everything to be the way it is, and finally bring an end to it. It's less character focused and more of a "grand scheme of things" route. The route is like Fire Emblem Fates: Revelation, except it doesn't invalidate the value of other paths' stories.
