The last couple of weeks have been HARD, the reality of being an American right now is incredibly depressing. My heart breaks for so many reasons but I think the main reason is know that this is not the America my grandparents wanted for my family and as much I miss them im glad that they are no longer on this Earth to see the hatred towards our community. I know the strength withing our community and know that we will not go down without a fight. As a first generation American I get to help provide a safe space to those who are afraid and will teach my daughters to be the safe for their friends at school.

We eat a lot of young gourds and stuff in Asian cooking. And one way we store it is drying. Like we noodle it...think zucchini noodles and hang them in the sun to dry (that is a sight to behold, quite funny). You can also cut them into thin slices too and just lay them flat to dry. You can bag them and store them at room temperature. We do freeze them like you too...but sometimes there is just too much, and freezer is only so big! lmao It has to hold meats and ice creams too!

You can also make dessert with it, it will be delicious. Pour sugar generously to cover the orange squashes and let it sit overnight. The sugar will dilute the squashes and then they will be ready to cook. If you want a soft and juicy consistency, boil them in a pot. Or if you want a more intense flavor, bake them. When they are cooked, you can eat them with tahini and coarsely ground walnuts on top.

my favourite favourite FAVOURITE squash recipe is to make soup with it, like a flavourful thick soup and then with the lovely abundance of soup left over so I make chef john’s (foodwishes) mascarpone squash gnocchi with it and my god it’s restaurant quality. it’s so incredibly delicious with brown butter and sage. pls give it a try!
