Fodder is exactly what most wild animals are looking for when foraging. Young, fresh, tender greens that are in loose soil. Its really no different than bean sprouts. My wife and I want to build a system very similar to this but a much smaller scale. I would be happy with 2 small trays per day. Seeing these animals going crazy over it is awesome though. I like that their barn is so clean. And the animals seem so happy.
