What is the advantage of using two lines of stitching to gather the ease? I've only ever seen it done with one.

Two lines will make even gathers, so that we can easily spread the ease and make it stable.

@@stevezytveld6585 with both the cases of gathering stitch in seamline or gathering stitch only in seam allowance, after seaming the gathering stitches should be removed, as it's acts as basting stitch to ease up the operation of assembling sleeve head to AH round (armhole round) . By removing it the gathers will fall relaxed and further stabilised through clipping and ironing to get clean joinery.✨
