I just started a cook and plates are set up somewhat as your. I have five plates and working with it. Temps are about 10 degrees difference. I appreciate you taking the time to make this video.

I know this is a old video but I really like it I've been doing offsets for a while You know these are a little on the smaller side compared to the great big ones and they can't handle the big fires and I think if you run the tuning plates right you can run a big fire Is that right

What’s up Fat E? Big Chris out of Kansas City. Are you running your firebox door and chimney wide open? I usually do but I’m still running a lot hotter by my chimney than my firebox. My next move is to shut the firebox door but leave the vents open. My only worry is less oxygen causing dirtier smoke. Trial and error method 🤞🏼

I am not sure William. next time I get a chance I will take a measuring tape to it and find out. Hopefully this video helps out a bit. i know its not perfect but it could give a good starting point.

Had one of these and noticed too much radiant cooking above the tuning plates. Proper drafting and top flow eliminates the need for tuning plates.

Hi Fat E, when you are managing your heat, do you try to maintain 250 the entire time, or do you take averages?. For instance, do you get the heat up to 275 and then let it drop to 225 before you add another log?

Great vid! The only issue I have with your otherwise outstanding vid is your heavy Uzbekistani accent. Maybe you could remove the dialogue from your vids and feature vignettes of traditional Uzbekistani folk dancing? Also for a folk dancing channel, I don't quite comprehend why you spend so much time on cooking. I love ethnic cooking but maybe less cooking and more dancing.

Consider changing your camera positioning, or blurring. I can see your house number and a bit of surroundings, watch out for creeps!
