This easy middle eastern inspired chopped salad replaces lemon juice with tangy orange marmalade to make a sweet dressing.
Ingredient list
3 small pitta breads
1 cucumber, peeled and diced
3 spring onions, chopped
3 tomatoes, diced
Bunch fresh mint, chopped
Bunch fresh flat-leaf parsley, chopped
1 clove garlic, minced
6 tablespoons extra virgin olive oil
2 heaped tablespoons marmalade
Pinch of salt
2-3 pinches of sumac
