Faworki (also called brushwood) are, next to donuts, the most popular carnival sweet. These are my childhood flavors. They are not difficult to make. Their biggest secret lies in long, thorough kneading of the dough so that it is well aerated. Thanks to this, the faworki are light and crispy. Recipe for 80 faworki:
• 400 g of wheat (cake) flour
• 6 yolks (115 g)
• 140 g of cream (12%, 18%)
about half a glass with a capacity of 250 ml
• 1 tablespoon of soft butter (about 15 g)
• 1 tablespoon of powdered sugar (15 g)
• 2 tablespoons of spirit (or rum, vinegar 10%)
• pinch of salt
• powdered sugar mixed with vanilla, for sprinkling
• 1 liter of oil for frying
