So... leftover suggestion. Put the leftovers in the bottom of a casserole dish (you want the chili mixture about an inch thick and make sure it’s cooked down fairly thick). Cover with shredded cheddar cheese. Add corn bread mix on top. Be sure to pour the cornbread on slowly so that you don’t mix the 2. Bake until cornbread is done. Try to wait for it to cool. It’s amazing! Corn bread pie!

When peeling your onion, chop/slice from the non rooted end. Also helps if you run cold water in your sink while you do this. The moisture helps with the fumes. Works for me every time. My eyes never water when chopping onions.

I agree about chili. I love it made in a crock pot and that’s the way I make it. I prefer canned diced or crushed tomatoes, juice and all. Canned mild chili beans, juice included. I do soak dried pinto beans and freeze to add into chili and soups. I do pork chunks, or beef chunks for stew, when marked down at grocery.

It’s how you’re chopping them. Cut the onion across the bulb roots, then cut the to and bottom Slice length wise, then cross cut. Zero issues with eyes now. ❤️. Good luck!

I had the same problem with onions until I started rinsing the onion halves or quarters under cold running water before chopping. (I've tried so many other tricks that didn't work.) Now, my eyes only sting when I try to skip this step.

I have found that storing the onions in the fridge and cutting them while they are still cold works the best. Chop a warm onion=cry, chop a cold one=no cry!

I serve my chili with a corn pudding on the bottom of our bowls add chili to the top,sour cream,and cheese. Corn pudding in case you wanna try: 1 can kernel corn, I can cream corn,8oz sour cream, 1/2stick of butter, and a box of corn muffin mix. Super easy mix all the ingredients pour in a 13x9 on 350 until knife is clean in the center.

I second this. When your knife is blunt it 'crushes' the onion as it cuts and releases more liquid. A super sharp knife glides through it without any of the liquid-releasing crushing of the onion. I do have to say that here is Aus, onions are potent so sometimes even a super knife sharp doesn't save us lol... maybe the same is true in Idaho

I have a terrible time with onions too. Since most of the onions I use are chopped, I usually buy the big bag at Costco, chop them in the food processor and freeze them. It takes a while, but the tears are minimal and over quickly. I put 1/2 cup size scoops on a cookie sheet, and once frozen transfer to a zip bag. Works great for anything that needs chopped onions. Also, I have found that the only way the candle hack works is if I hold the cut onion over the flame (hello soot!) or put the flame between my face and the cutting board. It works, but is awkward and dangerous.

I love when you find a great new favorite with a "clean out the leftovers" dish. After Christmas one year, I made a big pot of chili using chopped up ham for the meat. SO GOOD. The smokiness of the ham was a great complement for the chili flavors.

The trick to chopping an onion is A FAN!! Personally, I would keep a small fan in your pantry or cupboard that is easy to grab and plug in when you chop onions. I use a $15 Honeywell table fan that's only 11" big. The steady stream of fresh air will keep the onion fumes out of your eyes. I never cry when chopping an onion anymore! 😊

You can freeze pretty much anything (fats don’t freeze well, thought) because all foods have a water content, but you have to keep in mind that the texture after thawing wont be the same.

Yes! If you don't want them to dry out, keep them in the cooking water when freezing (you can add plain water to top off, if needed). They you defrost, drain, rince, and they are ready to use. I freeze them in Masson jars

Oh and for those tomato (or any other stains) use blue dawn. I keep a spay bottle with it mixed about half and half with water and as soon as I notice a splotch of anything, give it a good spray and throw it in the laundry. It can even dry up on the clothes but it comes out in the wash along with the stain.

For the onion - try popping the onions in the freezer for a few minutes before chopping (around ten minutes if you can). It helps me and I’m super sensitive to them. ☺️

Totally agree .I slice in half(core / root intact, put cut side down on cutting board, make horizontal slices,then vertical slices all the while holding intact. Now the last vertical slices starting opposite the core will do the nice small dicing. Voila ! Into the pan before those releases juices/ fumes reach my eyes.

Onion chopping, have you tried leaving the root end on for as long as possible? I cut in half top to bottom, through the root. It seem to take longer before the tears start. I use a big jar of salsa to make chili, then add other tomatoes, and all the rest. It gives a good base flavor. Use mild, medium, or hot depending on family taste. But I brown my meat a lot more than you did, more flavor. I love it with Fritos, but rarely have them in the house.

I am from Northern Vermont. We eat ours over mashed potatoes. That is how I ate it growing up and how I still serve it. I have never had it with chips though. I also put my onions in the fridge and they are less likely to make me cry.

For the onion the thing that has worked for me is not chopping off the root until I'm done. So I'll chop it in half through the root and then dice and stuff and chop the root off last.

I have a rechargeable small fan. One day I was having a hot flash while cooking. I had the fan next to me while cutting onions. It blew the onions fumes away from me. No eye pain. I now use it or the ceiling fan every single time.

Freezing an onion for 20 mins before chopping helps a little. Also when we have leftover chilli I puree it in the food processor to make a kind of sauce and put it on fries or serve with tortilla chips like nachos (:

My favourite meal stretcher for chili is making cincinatti chili, which is served over pasta, traditionally spaghetti :) 8 hearty adult servings for under $10 with a whole nother meals worth of leftover chili~ Luckily we're not big meat eaters outside of grilling season so that helps out with pricing for sure! - 20 oz Penne (Dollar Tree) = $1 - 1 lb Ground Turkey = $1.66 - 1 lb Dried Pinto Beans = $1 - 1 lb Small Red Beans = $1.18 - x3 28 oz Diced Tomatoes = $2.82 - 8 oz Shredded Cheddar for topping = $1.74 - Seasonings = Pantry

Onion tip, try to keep the onion together when you cut it, so it still keep its shape even though you've cut it (until you're done). It's sometimes hard but it has helped me with tears, at least 75% of the time.... Second thing, I eat chili with baguettes because that's how we did it when I grew up....

Love love love chili here! I'm another one who cooks up large pots of dry beans then freezes them for soup or chili. So easy. We like chili with taco chips and also on baked potatoes. Also on good quality hot dogs with raw onions and sauerkraut. I add cumin to my chili too, it seems to add more flavor.

Hey lady, easy trick to cutting onions. Put cutting board next to stove top, turn on burner closest to you. When you cut the onion, the flame draws in the chemical and burns it off before it ever rises. Works every time. I never get red, burning eyes.

Use a vidalia chopper; I'm really sensitive and that helps me. You still have to cut them a little, but not as much. I generally chop all my veggies with it to make the clean up worth it.

Keep the onions in the refrigerator. I worked in restaurants for 10 years, every one kept the onions in the refrigerator/cooler. It won't get rid of the burn entirely but it makes a significant difference.

Onions need to be cold! Keep them on the frig and you’ll never cry. Once I cut a warm onion and I was crying so much. When they are cold, the gases in the onion don’t escape as much. You have to try it.

cutting cold onions with a sharp knife is the best way to prevent tears! your eyes still tear up a bit but not nearly as much as with a room temp onion

Keep the roots on until the very end. It keeps the onion from releasing the gas that burns your eyes and the older the onion the more "tear" gas they have.

We like our chilli over macaroni. A couple of years back I was making chilli and used whatever I had in the fridge. I had a slice and half of pineapple left so threw it in the chilli as well. My family LOVED it with the bit of sweetness. I now cant make chilli without adding the pineapple.

Ground pork with ground turkey is more economical AND used together is more flavorful. I also add in a generous amount of cinnamon in my chili (1 tbsp). A sprinkle of Cumin is also a nice heat- maker. Tomato paste, too, to offset that added water from the frozen black beans. We like our chili thicker than a soup.

Girl try adding a heaping tbsp of tajin to your chili. It is life changing. The lime flavor puts chili over the top. You can find tajin in either the mexican section at walmart or with the fruit in some stores. I get the low sodium so it doesnt affect the saltiness but the flavorrrr omg

Winter onions are worse for crying. It's like all the crying stuff get concentrated. You can cut up and freeze onions ahead of time. Another youtuber I watch does gadget videos and one of the gadgets was onion goggles. If that doesn't work maybe one of those mandolin type combos that has a slap chop attachment.
