Honey has been traditionally used in cooking and baking, specially in the western culinary culture, honey has been extensively used in day to day meals. However, as per a study published in the journal AYU it was mentioned that adding honey to a temperature of 140 degrees may impact its efficacy and release a toxin known as 5-hydroxymethylfurfural or HMF, which has carcinogenic properties.

Thank you for the feedback. I haven’t tried to add garlic. Im willing to try it too. How is it when you add garlic? Its gonna be best to use as a dressing to salad.

Yes!. Once you started using it you have to refrigerate

i made this recipe in a 32 oz jar (4 in total). i would 'burp' it everyday and turn it upside down and leave it in a dark place. after one week 2 jars had little white dots on the top lemon slices? is this mold? should i trash these jars? what did i do wrong?

That does seem like mold. It’s possible the moisture content was too high, assuming your jars were sterile. You could try drying the lemons thoroughly before slicing, or increasing the honey content (using a bit less lemon). Some people also scrub the lemons with salt or baking soda to remove impurities that can potentially cause mold.

@@sisalicecastillo6259Room temperature. No higher than 36C, as with all enzymatic foods/drinks. You'll destroy the enzymes at higher temps, making your drink essentially just a 'flavored' drink.

@@gb3776 That's probably not it. It only temporarily feels relieving due to the warm temperature applied to the sore spot. It's much like how it's relieving to have a warm shower/bath. The microbial benefits however, are destroyed in the process.

Its fermented. So you dont have to. You keep it somewhere cool and out of sunlight and when you decide to open it then put in fridge. Lasts in fridge for 3-6 months at least as long as everything stays under the liquid. Air is what makes things go moldy

Yes. Safer. Well it defends where you live and season. If its winter you can leave it in a clean and cool area but during summer you have to keep it in the fridge specially if already used it. 😊

Just add ginger and lemon and Honey. Let it stay one month in a cool (not cold) dark place. Turn it upside down regularly so everything is covered. When you start eating it, the glass has to be put in the refrigerator to avoid mold

it ferments as it sits. after a week it will be lightly bubbly, the longer it sets the more fermented it gets.
