My brother dropped off a bunch of blueberries, and I knew just whose channel I wanted to consult. You never disappoint! Thanks! I mixed up a 2% brine to pour over and make sure everything's submerged. Hopefully that didn't add too much extra salt, but at least I know I don't have any air touching the berries. I'll try to remember to update this comment to let you all know the results.

We had company this past week so I'm finally getting caught up! This ferment looks ridiculously tasty. I've gotta try this!! Oh, I fed my dad fermented pickles this week and he ate an entire jar in one sitting. I don't think his guts were quite ready for that. 😂

I will definitely try this one. You smiled so many times, and a little dance. I cut back on my fermented foods for awhile. I was working so much outside, that i was getting dehydrated. Did you notice that, with yourself, while doing all that work? Excellent recipe!!!

Lol I drink maybe 1 cup of wine every other year ( if we can afford it) I definitely want to try fermenting blueberries now!!!! I can see a cheese and crackers spread with a blueberry and sprite drink or sparkling water. 😋 Yummy

If the acidity is high enough it will technically last a very long time. However the high sugar content will cause it to continue fermentation to some degree even in the fridge so it will continue to slowly increase the sour flavor

Question, if you use the blueberries in baked goods would they loose the benefits of the ferment?

I would say yes. Anything past 95- 105 will kill the live enzymes.

Some will be lost but some will remain. Bacteria breaks down the fiber to some extent so they will still be easier to digest and it also feeds on sugars so it will have less carbs. There are other benefits I came across years ago but I can’t find the source again, if I find it I’ll get that to you. Plus it has the flavor, my husband made blueberry pancakes with these and it was delicious and unique!

You alluded to some of the gut benefits and findings as well as other body health. The one that sticks with me is the gut feeling info you said a while back. Maybe providing the resources you used so that we can get them to learn from for ourselves as well? You truly opened my eyes on the nutrition of ferments.

Try doing a flash freeze with the blueberries. Lay the berries out on a baking sheet, kind of spread out. Stick in the freezer for a couple hours and then put in the vacuum bag with the salt and seal. This way you are not crushing the berries when sealing. When the berries thaw out, they will release their juice more.
