Spoilers: My guess is that they weren’t going for 13 orphans at first but they thought “this hand doesn’t win” so they decided to play defensively and discard the most dangerous tiles first until they kept drawing honors and terminals and then it was worth going for it. That’s what we tend to do when we’re too far away from winning.

I noticed that with two dragons in hand you usually pon the first (third) one that comes out and open your hand immediately, even if you're not sure about it. Why not wait for the final dragon to come out and pon that instead, to temporarily maintain some flexibility? are you just hedging against the final one being in the dead wall?

Haven't watched the video yet, but the answer is usually speed. Other players don't sit around and let you build bigger hands and winning fast hands stop other people from building big hands. If the hand has value accelerating is even better.
