If a male bites a female, then she becomes a vampire. So in Hellsing specifically you have to bite the opposite gender to get vampires and same gender to get zombies. In other lores there can be like a big necromancer who casts a curse and if they die, the curse ends. In some things they have just plain hierarchies of zombies which may or may not relate to bite order. So the concepts are related, but much more common with vampires.
