Try corn meal instead of flower in your gravy. Take out the meat and add the corn meal. Fry it until it gets goldish then pour in the milk and near the end add back in the sausage. its the bomb

I have 1 problem with the biscuits (aside from the user error with the oven) and 2 with the gravy: 1) The biscuits would have been much fluffier (taller) if you used buttermilk as the acid would interact with the baking soda in the baking powder. You can make your own buttermilk by adding 1tbsp of lemon juice for every cup of milk. 2) Having all that extra oil after you added milk means you didn't use enough flour to fully absorb it all. Oil and flour is how you make a roux which is how sauces like bechamel and country/sausage gravy are thickened and is equal parts oil/butter and flour. 3) The roux needs to be cooked for at least 2-3min before adding milk in order to not have raw flour which can make people sick.
@FarEastPapi Жыл бұрын
Thanks for the tips Jason.

That's how this Missouri boy was taught, you brown your flour in equal parts of bacon grease before adding the milk. My grandfather was born and raised in Breckenridge County, Kentucky

My grandma (from Eastern Kentucky) started her biscuits by melting lard in the pan she was going to make them in. She started with buttermilk (you can sour milk by adding lemon juice to sweet milk), added a teaspoon of baking powder and a small amount of baking soda to counteract the acid in the buttermilk. Then she added self-raising flour to make a very soft and sticky dough. Then she would pour in the melted lard and quickly mix it in. You could see the texture of the dough change and become smooth and stretchy. She would scrape it out onto a floured biscuit board and gently fold and turn it just three or four times until the surface wasn't sticky. It was still sticky inside and you had to clean off your biscuit cutter every two or three biscuits. She put them in the pan just touching and baked them until done. She taught me how to make them but it was by look and feel so I don't have any measurements 😂. She was a school teacher so she didn't have time to cut in butter or lard. She streamlined her biscuit process 😊

I hope I'm able to bring or ship my cast iron skillets from Georgia? I totally get the Southern style cooking ya'll probably miss. My skillets were willed to me from my Great Grandmother with the recipes. That's 118 years of seasoning in those things, and worth every penny too. I put on 10 lbs in a week when I got them, and don't regret any of those pounds. The cornbread, sausage gravy, pancakes, corn fritters, and fried eggs were just out of this world.

I just had to say, I am sure you know that you can freeze those biscuits and they will last a few weeks in the freezer.. it's really nice to have a good homemade biscuit with your breakfast when you do not feel like making them.. I remember my mother taught my ex-wife how to make cat head biscuits.. I would carry the damn things around in my coat pocket during the winter time and I always have some roasted peanuts in my pocket.. I will usually take a couple or three days and cook lots of good stuff while I am sipping on some good Jim Beam Bourbon and then freeze it and eat on it for a week or two.. some things actually taste better after they off Frozen.. I noticed you had liquor on your shelf and nobody was drinking.. I sure would have had a couple of Jim Beam and water while I was watching you make the biscuits and gravy for sure.. I could never stay up all night and drink and play cards anymore because it would probably kill me, but of course I surely did do that a lot when I was younger.. now I am a teetotaler but I should do like my Kentucky bourbon every now and then.. I have no problem having a few drinks anytime of the day but I cannot drink very much and I certainly cannot drink everyday.. I'm sure you already know that you can freeze those biscuits but I just had to get it off my chest..hehe

@Robbin S It's there. People who aren't from Kentucky may make it out easier than someone with a thicker Kentucky accent. I'm Texan myself and even if most people HERE wouldn't notice my accent much since it's comparatively slight, I had some Canadians politely ask if I was Texan when I visited up there, and my Aunt from California said it's DEFINITELY there.
